Royal Icing Recipe
1/4 Cup Meringue Powder
1/2 Cup Water, Cold
3 Cups Powdered Sugar, Sifted


In a grease-free bowl combine water and meringue powder. Use a whisk attachment on a stand or hand mixer and beat the mixture on medium speed. Continue to beat until stiff peaks form. Stiff peaks are peaks in the meringue and water mixture that stand up straight when you pull the beater away from it. Slowly add in powdered sugar a 1/4 cup at a time until desired stiffness is reached.

Stiffness Guide:
Roses and Stand-Up Details....Should stick to a spoon when you turn it upside down
Piping and Dotting......Slightly less stiff than roses

Densed Up White Cake Mix (From Box)

1 - 18.25 oz Cake Mix Package
1 Cup Buttermilk
4 Eggs, Whole
1/4 Cup Oil
1/4 Cup Flour

Preheat oven to 325F. Mix all ingredients in a bowl with an electric or stand mixer until batter is thick. Place in pre-greased cake pans. Tap the bottom of each pan until you see air bubbles stop rising to the surface of the cake batter. Bake according to pan size and remove from the oven.  Immediately press down the cake in the pan with a clean pot holder or towel to bring the cake down.  Cool and decorate as usual.
